2 weeks of meals

Well, last week was a little nuts so I didn’t get a chance to post. Made some slaw, salad, and it’s summer so it’s grilling season!

Started with this Iceberg and Cabbage Slaw, I’ll post the recipe info below. Since that had buttermilk in it, I also wanted to make another recipe with buttermilk, to use it up. Usually I’d make these Buttermilk Pancakes, but I really wasn’t feeling it, so I decided to try my hand at Skillet Cornbread instead. The slaw was very good, I just wish the hubs at slaw so I didn’t need to eat it all myself. But very flavorful. The cornbread…was a little dry, I think I’d make it with butter in the future, and not bother with the chives they didn’t really add anything.

I made a bunch of these Cobb Egg Salads to have throughout the week. I wish I could have packed them up in mason jars, but I didn’t have big enough ones. I added the rest of the cabbage and iceberg from the slaw, I just packed it up in ziplocks in the containers to keep it from getting soggy. Was pretty tasty, not quite enough dressing since I added the lettuce and stuff.

Then we went with some pineapple themed meat, grilling up Pineapple chicken tenders and these Teriyaki burgers again. Good stuff, and simple, plus I had the teriyaki sauce left over from Mother’s Day.

Threw in some Apple Grilled Chicken but made it with my strawberry jam instead.

Now this week, keeping it simple. Made some Cilantro Lime Chicken, some Juicy marinated steaks , and grilled 2 ears of corn.

Figured since I was on a little corn kick I’d continue that with Creamed corn and Zucchini Feta salad. Also was trying to use up some Ricotta from 2 weeks ago when we had the fresh strawberries. So in addition to those 2 things, I made this Spinach and Ricotta Baked Ziti, which was pretty good, although my hubby says it could have used a different cheese that was a sharper cheese.

Weekly Meals 6/4

We went strawberry picking this week, so guess what featured in all our recipes?

I started off by making Strawberry Jam because I was going to need it for some other recipes. It worked really well, but I wish it called for less sugar…I’ll probably cut the amount of sugar in half next time.

This morning for breakfast we had these PB&J smoothies. Hubs thought it wasn’t sweet enough and added sugar and more strawberries. I liked it as is though, I don’t need as much sugar as he does.

Also had this Ricotta & Strawberry Toast which was pretty good. We used a tangerine/strawberry marmalade, and it was perfect with the rest.

We’ve had this Strawberry Banana Bread before and it was amazing, so we decided this was the perfect time to make it again.

I made this Farro Caprese Salad which was pretty decent, but I over salted the farro a little. Definitely didn’t need as much, especially since it’s made with pesto.

This Strawberry Grilled Cheese would have been amazing if I hadn’t burnt some of it 🤦🏼‍♀️ I over toasted one side, but the flavor was good other than that.

Strawberry Balsamic Baked Wings had excellent flavor, but I think I’d do it a little differently. I’d like to do a straight double air fry instead of baking and then just toss them in the sauce at the end.

Last but not least I made these Strawberry Balsamic Glazed Meatballs. They were definitely the best, most well-rounded item of the day and that’s something I look forward to eating for the rest of the week. After I took the picture I threw some rice in the bowls and were ready to go!

All in all not a bad haul, plus a few snack size bags of fresh strawberries for snacks.
