2 weeks of meals

Well, last week was a little nuts so I didn’t get a chance to post. Made some slaw, salad, and it’s summer so it’s grilling season!

Started with this Iceberg and Cabbage Slaw, I’ll post the recipe info below. Since that had buttermilk in it, I also wanted to make another recipe with buttermilk, to use it up. Usually I’d make these Buttermilk Pancakes, but I really wasn’t feeling it, so I decided to try my hand at Skillet Cornbread instead. The slaw was very good, I just wish the hubs at slaw so I didn’t need to eat it all myself. But very flavorful. The cornbread…was a little dry, I think I’d make it with butter in the future, and not bother with the chives they didn’t really add anything.

I made a bunch of these Cobb Egg Salads to have throughout the week. I wish I could have packed them up in mason jars, but I didn’t have big enough ones. I added the rest of the cabbage and iceberg from the slaw, I just packed it up in ziplocks in the containers to keep it from getting soggy. Was pretty tasty, not quite enough dressing since I added the lettuce and stuff.

Then we went with some pineapple themed meat, grilling up Pineapple chicken tenders and these Teriyaki burgers again. Good stuff, and simple, plus I had the teriyaki sauce left over from Mother’s Day.

Threw in some Apple Grilled Chicken but made it with my strawberry jam instead.

Now this week, keeping it simple. Made some Cilantro Lime Chicken, some Juicy marinated steaks , and grilled 2 ears of corn.

Figured since I was on a little corn kick I’d continue that with Creamed corn and Zucchini Feta salad. Also was trying to use up some Ricotta from 2 weeks ago when we had the fresh strawberries. So in addition to those 2 things, I made this Spinach and Ricotta Baked Ziti, which was pretty good, although my hubby says it could have used a different cheese that was a sharper cheese.

Meals on 5/31

This week was special because we were away over the weekend, so I specifically took off Tuesday and Wednesday (today) so I made sure to have time to do all the adult things like cooking and laundry and renewing my car registration.

So I didn’t make as many dishes, and I’ll still probably cook again on Sunday for the following week. But what I did make really highlights the fact that it’s grilling season!!

I did make a slow cooker dish, just so I had something that I was just a set it and forget it meal….this Chicken and Orzo that we’ve had a ton of times before. It’s a go to for me when I want to have a dish that is a whole meal really easily.

Then I made this super simple Grilled Peppers with Burrata – I was too lazy to make and add the breadcrumbs, which it honestly kind of needed for some texture variety, but it was tasty.

I did this Grilled Chicken, Asparagus, and Artichoke Pasta that has a nice lightly lemony creamy sauce. It’s pretty delicious, was simple to put together, and is well-rounded.

I do think I’m going to try to cut back on pasta, but I had this on the meal plan already and since we had been away I just didn’t feel like changing or updating it. Not that pasta is bad, it just makes me feel weighed down and often a little inflamed the day after.

And the best part of this meal….we made Grilled Hoisin Beef. This is one of my favorite marinades ever, and I think I’m actually going to make a container of it to keep on hand for whenever we want to marinate meat. We ended up marinating for a full day mostly just because that’s how the timing worked, but we ended up with juicy and incredibly flavor packed steak.

And we grilled some corn too, because that’s just what you do in the summer.
